Regina APC-11 – bench scraper for pizza, bread and pastry

Dividing dough, cutting portions and gathering up dough scraps: the Regina APC-11 is a compact tool for your dough preparation. The stainless steel blade is guided by a shaped red plastic handle.

With a width of 15.8 cm and an overall height of 12 cm, the dough cutter offers a handy working surface. The hole in the handle is for hanging it up.

Portion dough and keep work surfaces clean

Place the blade on a suitable surface to cut off pieces of dough. For even portion weights, use the scraper together with scales. It is suitable for pizza, bread and pastry dough and for gathering up loose dough scraps.

A metal edge can damage delicate surfaces. Work carefully and do not use the APC-11 as a scratch-free scraper for coated surfaces or plastic boxes.

A useful addition for your dough balls

For flexibly lifting dough balls out of proofing boxes, we offer the Regina SPR-24 and SPR-25 dough scrapers. The APC-11 complements them for cutting and portioning on the work surface.

Cleaning and storage

Remove dough residues after work and clean the blade and handle gently by hand. Dry the tool carefully, especially at the joint between handle and blade. The hanging hole allows space-saving storage.

The metal edge can scratch delicate surfaces. For flexibly reaching under dough in proofing boxes, suitable plastic scrapers are a better choice; follow the container manufacturer’s instructions.

Can I hang up the bench scraper?

Yes. The handle has a hanging hole for storage after cleaning.
